Ajijic is a very low-key town. It is great for eating, relaxing, and getting married, but it doesn't have major attractions per se. For that, you may want to consider extending your stay and broadening your trip to other parts of Jalisco. Here are some ideas:
Guadalajara is a major metropolis and definitely worth a visit. We recommend staying in Colonia Americana, a leafy, hip neighborhood -- the "Condesa of GDL" for those who have been to CDMX. It is also situated nicely between two other parts of the city worth seeing: restaurants and nightlife along Avenida Chapultepec to the west, and historical sightseeing in Centro Histórico to the east.
The regional street food is the torta ahogada: a sandwich made with local birote salado, a salty mexican variation of the baguette, that is stuffed with your choice of meat and drenched in salsa. Also don't pass up the opportunity to try tejuino: a sweet, refreshing drink made from fermented corn and sugar topped with lime sorbet.
A nearby suburb of Guadalajara, Tlaquepaque is another pueblo mágico and like Ajijic, it is extremely tidy, beautiful, and walkable. It is also a major shopping destination known for its ceramics, and the last time we visited we came home with a suitcase of things for our kitchen. Our favorite taller (studio) was Paco Padilla.
Blue agave is native to Jalisco, and tequila got its name from the town just west of Guadalajara, where it was first distilled. Online you will find many all-day tours that will shuttle you from Guadalajara to Tequila and back, stopping for distillery tours / tastings along the way.
For tequila tasting/shopping in Guadalajara, definitely make a reservation at the Mezonte tasting room. They offer educational tastings in English and Spanish, and they source from distilleries that are smaller/more-artisanal compared to the ones you'll visit on a Tequila driving tour.
Once you're in Mexico, getting to other parts of the country is cheap & easy! There are so many places to see. Consider extending your trip:

- If you want to see beautiful, colonial architecture: Guanajuato, San Miguel de Allende, Morelia
- If you want to see ancient ruins: Chichen-Itza, Palenque, Monte Alban
- If you want a LGBT-friendly getaway: Puerto Vallarta, Puerto Escondido
- If you want a luxe beach vacation: Cabo San Lucas, Cancun
- If you want outdoorsy tourism: Cañon Sumidero, Barranca del Cobre
